En janvier 2025, David Toutain a ouvert Duet, son deuxième restaurant à l’étranger après celui de Hong Kong. Situé au sommet du Ritz-Carlton, à Bangkok, Duet propose une cuisine très végétale, mêlant gastronomie française et inspirations locales. Entretien avec son chef exécutif, Valentin Fouache.
